Vegan Pot de Crème! No-bake chocolate custard
Vegan Pot de Crème!
Chocolate pot de crème was one of my favorite desserts to order at restaurants before I went dairy free. Today I’m sharing a vegan Pot de Crème recipe.
It had never occurred to me that I could make this dessert at home with the ingredients of my choice until a few months ago when a friend mentioned how easy it is to make. It just seemed like something only a chef could make.
Of course, I immediately started looking for a plant-based recipe.
What is Pot de Crème?
If you don’t know what Pot de Crème is, I didn’t either until I saw it on a restaurant menu and decided to try it. It reminds me of a fancier version of the boxed chocolate mousse my mom made for us as kids, but with a more intense chocolate flavor and richer texture.
They’re typically served in small dishes, hence the name pot de creme, which translates to "pot of cream." It's pronounced "poe deh krehm," in French.
I came across a few good recipes in my search, and ended up with my own version that’s not only plant based but nut, soy, and oil free with reduced refined sugar.
This plant based chocolate pot de crème has become a family favorite and my six year old loves helping to make it. My friend was right – it really is surprisingly easy to make.
Unlike traditional pot de creme which is cooked on the stovetop then baked in a water bath (adding almost an hour to the process), this version is made in a blender and sets in the refrigerator like a mousse.
Date Sugar and Maple Syrup Benefits
I’ve recently started testing date sugar more often in my recipes in order to reduce refined sugar. It’s a minimally processed sweetener that’s made by taking dried dates and grinding them into a powder.
I often use maple syrup as well, which is the sap of maple trees, minimally processed to produce the consistency it’s known for.
Both maple syrup and date sugar contain essential minerals such as phosphorus, potassium, calcium, magnesium, and zinc. They’re lower on the glycemic index than refined white sugar, which means they don’t cause as much of a blood sugar spike. They also contain prebiotic fiber which is beneficial for your gut microbiome.
In comparison, conventional white sugar is extracted from sugar cane or beets. It’s highly processed and stripped of the micronutrients and fiber from the original plants.
This recipe has it all - it’s delicious, quick, easy, and nutritious! It’s the perfect recipe for a special dinner or date night at home.
