I find it easiest to make the homemade peanut butter cups in silicone baking molds or use parchment paper cup liners.

Ingredients

Bottom Layer (Chocolate

  • cup peanut butter all-natural or fresh ground. See notes for variations.
  • tbsp coconut oil extra virgin/refined. See notes
  • 1 tsp pure vanilla extract
  • 3 tbsp unsweetened cocoa powder
  • 2 tbsp honey

Top Layer (Peanut Butter)

  • cup peanut butter all-natural or fresh ground.
  • 2 tbsp coconut oil extra virgin/refined
  • 1 tsp pure vanilla extract
  • 2 tbsp honey

Garnish

  • 1 sprinkle sea salt

Instructions

  • Line a muffin tin with 12 parchment paper muffin liners. Or use silicone cups or molds.
  • In one of the bowls, melt 2 ½ tablespoon coconut oil in the microwave.
  • Stir in all ingredients for the bottom layer (chocolate) together until smooth. Set aside.
  • In the other bowl, melt 2 tablespoon coconut oil the microwave.
  • Stir all ingredients for the top layer (peanut butter) together until smooth. Set aside.
  • Scoop a heaping ½ tablespoon of the chocolate layer into each muffin cup. Shake a bit until the layer is set evenly.
  • Place ½ tablespoon of the peanut butter layer on top of the chocolate layer. Shake a bit until your cups are even.
  • Sprinkle each cup with some sea salt. (Don’t skip this step - it is the secret to pure heaven in your mouth.)
  • Place muffin tin in the freezer for 30 minutes or until firm.
  • Keep healthy peanut butter cups in the freezer until ready to enjoy them.

Notes

Be sure to use coconut oil, and not any other kind of oil. Coconut oil is solid at room temperature and is key to this recipe setting firmly. You probably want to use refined, sometimes called extra-virgin, coconut oil unless you want a really strong coconut flavor in your treat.
Variations: You can use any kind of nut butter. I have tried all kinds and they come out terrific.
